Listening to a fast-food CEO interviewed by Yahoo. He’s talking about pizza being innate in some parts of America before everything got franchised. I noticed it when I moved to Pennsylvania. Pizza was solely a franchise food in the midwest, but pizza by the slice was served in every little cafe in PA.

Random thoughts about ethnic food in restaurants vs homes.

French, Spanish/Mexican, Italian, and Chinese have always been popular restaurant foods, even in areas with no immigrants from those countries.

African food is universal in the South, but there are very few African-style restaurants. (I guess this is the same as the PA Pizza above. When every restaurant serves cornpone, collard greens, okra and grits, there’s no need for a named franchise.)

British “food” is totally absent from this country. There are no British restaurants, and nobody** eats kidney, boiled tongue, bloater, stodge, haggis, spotted dick, or blood pudding. You’d think the hillbillies might maintain British “food” traditions along with ancient British dialects, but they adopted African instead.

German food is common in homes, especially in the midwest. Sauerkraut, pumpernickel, all kinds of sausages. BUT: There are no “German” restaurants. Those German specialties are only served in “Jewish” delicatessens. Leftover from WW1 propaganda?

** British “food” might be popular with anorexics who enjoy both directions of eating. Most people prefer food that goes in one direction.

Contra: Reddit has some yummy-looking pix of the modern British breakfast. Most look similar to a proper Okie breakfast except for the black circles which seem to be blood pudding cookies or something. Gak.
